In France, pancakes are pretty much everything. But salt pancake? What on earth is that thing? Buckwheat pancakes are Brittanny’s specialty. As the name suggest, those are pancakes made with buckwheat flour. In Lyon, there’s a restaurant which made those salty pancakes their forte.

Mere Suzette is right next to Croix-Rousse. You may recognize it by its fancy decorations, mainly light bulbs, and those lovely scents. Like your typical pizzeria, Mere Suzette propose quite a roster of buckwheat pancakes: to the very classic ones, with eggs and bacon, to the bolder ones, with camembert, chorizo or even seafood. And if you’re not much of a gourmet, you can still enjoy the deck, which pretty much comes straight off a fairy tale. But enough of us, let’s hear from Benoit, the chief of Mere Suzette.
